  • 1 pound (454 g) boneless beef chuck, cut into 1-inch pieces
  • 1tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp all-purpose seasoning
  • 1 tbsp soya sauce
  • 3 medium cloves garlic, peeled
  • 1 can coconut milk
  • 6 allspice berries
  • 4 tbsp oil
  • 3 sprigs fresh thyme
  • 2 scallions, root ends trimmed
  • 1 whole Scotch bonnet pepper
  • Kosher salt
  • Freshly ground black pepper

Instructions

Place beef in a large bowl and add garlic powder, onion powder, all-purpose seasoning, soya sauce, black pepper, and salt. Mix and let marinate for 20 mins. Drain beans and set aside.

In a large pot, pour in oil. When hot, add garlic, thyme sprigs, allspice berries, the Scotch bonnet pepper, and scallion. Sauté on medium heat, then add marinated beef. Cover and cook on medium heat.

Add coconut milk and beans and simmer on low to medium, stirring occasionally until cooked and thickened to a creamy consistency.

Serve on top a bed of rice and salad of choice.
